The TCA fully automatic vacuum tumbler is a vacuum marinating equipment specially designed for deep‑processing of meat, poultry, seafood and other food products. It is made of food‑grade SUS304 stainless steel, integrating a vacuum system, frequency conversion speed regulation and PLC touch screen control technology. Under vacuum conditions, the equipment physically tumbles and massages the material, allowing marinade to penetrate quickly and evenly into the meat structure. The circular end cover design significantly increases tumbling space, and the arc‑shaped paddle design prevents surface damage. It is suitable for marinating Western‑style sausages, ham, bacon, roast meat as well as Chinese‑style braised and snack meat products, effectively improving product elasticity, water retention and yield.
Working Principle
The TCA fully automatic vacuum tumbler operates on the physical impact principle. Under vacuum conditions, seasoned meat pieces are placed into the drum. As the drum rotates, the meat is tossed up and down inside the drum, with some pieces carried to the top by baffles and then falling freely, colliding and impacting with pieces at the bottom. Due to continuous rotation, each piece has the opportunity to tumble, rub and collide with others, softening the originally tough meat, loosening muscle tissue, and accelerating the penetration and diffusion of marinade, achieving massaging and marinating effects.
Under vacuum, the meat material expands, allowing proteins to fully contact the brine, accelerating protein dissolution and interaction to increase adhesion between meat pieces. The equipment also features a “respiratory” function, causing the product to undergo expansion and contraction movements inside the drum, further improving meat tissue structure, yield and slice appearance.
